📸 Fresh naan

Made fresh naan for with dinner tonight (will be butter chicken).

I make my naan in a cast iron skillet. It doesn’t take long, just a few minutes to knead the dough, then let it rise, then it only takes 2 minutes to cook each piece.

Here’s the recipe that I use

â–¢ 1 teaspoon honey
â–¢ 1/2 cup warm water
â–¢ 1/4 oz. (10g) active dry yeast ((2 1/4 teaspoons) )
â–¢ 2 1/4 cups all-purpose flour
â–¢ 1/2 cup plain greek yogurt
â–¢ 1/2 teaspoon salt
â–¢ 1 tablespoon vegetable oil
â–¢ some more oil (for greasing the skillet)
â–¢ some butter (for rubbing on the finished naan)

  1. Combine warm water and honey in a large bowl. Then add the yeast. Wait 5 minutes for the yeast to activate.
  2. Add the flour, yogurt, salt and 1/2 teaspoon vegetable oil. Combine with a soft spatula until the dough starts to come together, then with your hands.
  3. Knead by hand for approximately five minutes, until the dough is uniform and a little bit shiny.
  4. Grease large bowl (I use the same bowl that I made the dough in) and return dough to greased bowl. Cover, and put in a warm place.
  5. Allow dough to rise until doubled in size, usually about an hour and a half.
  6. Separate risen dough into 8 pieces and roll them into balls.
  7. On a lightly greased surface, take a dough ball and squish down with your palm. Gently squish the ball with your palm and fingers until it forms into a small disc, about the thickness of a coin.
  8. Heat your cast iron skillet to medium-high. (Don’t forget to cover your skillet’s handle with a cloth to remind you that it is hot!)
  9. When your skillet is hot, place the first naan into the pan and wait for it to bubble. If you have the temperature right, you will have just enough time while it’s cooking to turn the next dough ball into a disc.
  10. When your naan starts to bubble, flip it in the pan. Let it cook on the other side for about 30 seconds to a minute.
  11. Place the cooked naan on a plate, and rub butter on the naan.
  12. Put the next disc of dough on the skillet, and form the next dough ball into a disc.
  13. Repeat process until all naan is cooked and buttered.
